It's a new year! What a great time to start making your own salad dressings at home. Keep it simple and easy to clean by adding all ingredients into a blender and blending until smooth.
Creamy Herb Dressing
- 1 small shallot, minced
- 1 cup mixed fresh herbs (mint, basil, parsley, tarragon, chives)
- 1 cup low-fat plain Greek yogurt
- 1/4 cup water
- 1/4 cup extra-virgin olive oil
- 3/4 teaspoon honey
- Salt and Freshly ground black pepper to taste
Greek Vinaigrette
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup good red wine vinegar
- 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper
- 1/2 cup good olive oil
Citrus Vinaigrette
- 3-1/2 tablespoons apple cider vinegar
- 1-1/2 teaspoon grated orange zest
- 2 tablespoons fresh squeezed orange juice
- 2-1/2 teaspoons Dijon mustard
- 2 tablespoons pure maple syrup (or honey)
- 2/3 cup light olive oil
- Salt and freshly ground black pepper to taste
Creamy Avocado Vinaigrette
- 1 ripe avocado
- 1/4 cup white wine vinegar
- Juice of one lemon
- Salt and pepper, to taste
- 3/4 cup extra virgin olive oil
