Ingredients:
- 3/4 cup lentils
- 1/4 cup barley
- 1/4 cup dried onion
- 1/2 cup black beans
- 3/4 cup dry split peas
- 2 tsp italian seasoning
- 1/4 cup uncooked long grain rice (brown or white)
- 2 bay leaves
- 1/2 cup uncooked whole grain small shell pasta
Layering Directions:
In large mason jar, layer split peas, black beans, lentils, barley, onion flakes, seasoning, rice and bay leaves in a jar, pressing firmly each layer before adding the next. Add pasta as the last layer. Seal tight with lid.
Additional Ingredients:
- Black pepper to taste
- Minced garlic to taste
- 1 can diced tomatoes
- 1 (6 ounce) can tomato paste
- 8 cups of vegetable or chicken broth
- 4 cups water
Cooking Directions:
Remove pasta and set aside. In a large pot over medium heat, saute garlic and pepper. Add diced tomatoes, tomato paste, broth, water and soup mix. Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes. Stir in pasta, cover and simmer 15-20 minutes or until pasta, peas, lentils, beans and barley are tender.
