Dressing Ingredients:
- 1/3 cup fresh lime juice
- 1/2 teaspoon ground cumin
- 2 cloves garlic, chopped
- Few dashes hot sauce
- 1/2 cup olive oil
Slaw Ingredients:
- 3 carrots, peeled and shredded
- 1 medium head green cabbage, shredded
- 1 red bell pepper, julienned
- 1 red onion, thinly sliced
- 1/2 cup chopped fresh cilantro
- Salt and Pepper
Directions:
- Place all dressing ingredients in bowl and whisk until combined.
- For coleslaw, place veggies in a large bowl, toss with dressing and season with salt and pepper.
