Recipe: Chickpea Burgers

Try this meatless meal idea! Ditch the meat replacement burgers that often have more sodium and saturated fat than a regular burger. Instead enjoy these homemade veggie burgers.
Ingredients
- 1 14-ounce can of no salt added chickpeas (garbanzo beans), drained
- 1 medium white onion, diced
- ½ cup diced carrots
- ½ cup diced celery
- 1 cup rolled oats
- 2 tablespoons salt-free chili powder
- 2 egg whites
- ½ teaspoon freshly ground black pepper
Directions
- Combine all ingredients together in a food processor. Pulse until chunky consistency (not pureed). Using a spatula, scrape out mixture into a medium mixing bowl.
- With wet hands, scoop (about ½ cup) of the chickpea mixture and shape into patties. Place patties on a plate.
- In a large, hot skillet, evenly spray a small amount of non-stick cooking oil.
- Sauté chickpea burger patties on both sides until hot and golden brown.
- Serve on a whole wheat bun with veggies and your favorite condiments and enjoy!
Serves 8 – 1 patty per serving
